Stick of Butter Rice

I wish I could take credit for this amazing dish but, alas, I can’t. I saw this recipe online (can’t remember where) a while back and thought it sounded good…so I gave it a shot and OMG! It is amazing!

I served it with Chicken with 40 Cloves of Garlic and Honey Maple Roasted Carrots last night and it was awesome. This is one of the easiest, most flavorful side dishes you will encounter.

Instructions
  1. Preheat oven to 425°.
  2. Combine rice, soup and broth in a 9x9 inch baking dish. Stir in mushrooms (if using). Put butter slices on top.
  3. Cover with foil and bake for 30 minutes. Remove cover and bake for an additional 30 minutes.
Recipe Notes

I usually use a combination of several kinds of mushroom. The rice in the picture has crimini, black trumpet and hen of the woods.
