Maple Butter Mashed Sweet Potatoes

Please don’t hate me but I think that, right behind Green Bean Casserole 🤢, Sweet Potato Casserole is one of the nastiest dishes that is served at nearly every Thanksgiving feast. It is sweet on sweet on sweet. Between the sweet potatoes, marshmallows, brown sugar and pineapple….it’s just too much!

Consequently, I’m constantly looking for alternatives. This recipe is this year’s “alternative.”

Instructions
  1. Boil the potatoes in an 8qt saucepan of salted water until tender (about 25 minutes).
  2. Grind the spices and ginger into a paste with a molcajete while the potatoes cook.
  3. Drain the potatoes. Add the butter, maple syrup and spice mixture. Mash and mix the potatoes with a potato masher. Serve with butter.
