Chocolate Lava Cake

Chocolate lava cake is a perennial favorite in restaurants and for good reason. It is a super rich, ultra decadent dessert. This recipe makes a “single serving” cake but I don’t know anyone that could eat a whole one by themselves.

Instructions
  1. In a microwave safe bowl, melt the chocolate and butter on full power for 30 seconds and then stir.
  2. Add sugar, espresso, egg and vanilla. Mix well until combined.
  3. Add Flour and gently whisk in until combined.
  4. Spoon into greased 10cm ramekins, place in a preheated oven at 400 for 10 minutes.
  5. Let stand for 10 minutes.
  6. Remove carefully by turning upside down onto a board, dust with powdered sugar and serve immediately.
